STRAWRAD

A bilateral project between Portugal and Tunisia (Institut Supérieur de Biotechnologie de Sidi Thabet, Université de La Mannouba) focuses on the effects of conventional and non-conventional strawberries processing on their microbial, sensorial and nutritional properties and also their antioxidants profiles and bioactive properties (antidiabetic, anti-inflammatory, antimicrobial). This study will contribute to the body of knowledge on food technology and will be useful for scientists, professional and nutritionist to confirm if irradiated/processed strawberries preserve the same bioactive potential and guarantees the safety and quality as those previously reported for fresh and freeze-dried ones.
